There are a lot of versions of this going around, one of my favourites involved potato chips (crisps, not fries) and another favourite involved avocado. This is the version I came up with!
Mash
some chickpeas with the back of a fork until chunky and stiff, mix with
lemon juice, extra virgin olive oil, finely diced onion and celery, finely sliced/chopped nori
(that 'seaweed' that is actually algae that you wrap sushi in -- skip if you can't
find any or don't want your salad to taste of the sea*), finely chopped black olives and/or capers (skip if you are going low-salt),
and a little salt & pepper. Spread on a tortilla wrap (Gluten-free? No prob, use a corn tortilla wrap!) add some
lettuce, maybe some tomatoes, roll up, and eat. It's also great in a pitta or on bread or just on its own.
Healthy, low-fat, and delicious!
* And by 'of the sea,' I mean 'fishy.' Kind of. You know, in a good way.
